Chef Anthony Felan, the esteemed owner and executive chef of Fat Calf Brasserie in Shreveport's Highland neighborhood, showcases his expertise in French-inspired cuisine, cultivated during his formative years at Le Cordon Bleu College of Culinary Arts in San Francisco. Alongside him, Jimmy’s Chef de Cuisine, Jose Granillo, a French-trained culinary virtuoso, enriches the restaurant's culinary landscape with his skillful techniques and creative flair. Together, they have curated a 5 course wine pairing dining experience that seamlessly blends tradition with innovation.

Meet the Chefs
About Chef Jose
Chef Jose Granillo, hailing from Spain, pursued his culinary passion through European apprenticeships and stints under Michelin-starred chefs. He broadened his expertise in pastry and confectionery, later serving in the US Marine Corps to gain citizenship. Granillo's journey took him across Europe, the Caribbean, and the US, including roles at Ritz Carlton and JW Marriott resorts. Eventually settling in Indiana and Louisiana, he contributed to various casino kitchens before finding his niche at Jimmy’s Seafood and Steak. Granillo's culinary finesse consistently earns acclaim. Outside the kitchen, he enjoys canine companionship and outdoor pursuits.
About Chef Anthony
Anthony Felan, owner and executive chef of Fat Calf Brasserie in Shreveport's Highland neighborhood, began his culinary journey at Le Cordon Bleu College of Culinary Arts in San Francisco. After mastering French-inspired cuisine, he worked at renowned Bay Area restaurants. Returning to Shreveport in 2010, Felan excelled at Wine Country Bistro before launching 2nd Act Supper Club and Fat Calf Boucherie food trailer. This success led to Fat Calf Brasserie's opening in 2019. Louisiana Cooking magazine named him a Chef to Watch in 2020, and in 2024, USA Today recognized his restaurant among the top 47 in the US. The 2nd Act Supper Club now resides as an event venue in Highland.
